Baked Chicken Wings, Two Ways

Ingredients

  • 4-6 pounds chicken wings, rinsed and patted dry
  • 1/4 cup Cholula
  • 1 stick unsalted butter (8 tbsps)
  • 2 tbsp white wine vinegar (or sherry)
  • 1 tbsp minced garlic
  • 2 tbsp neutral oil (corn, canola etc.)
  • 1 cup beer (stout or porter)
  • Salt, pepper
  • Celery sticks
  • Ranch dressing

Tools

  • 2 baking sheets
  • Cutting board for chicken
  • Sauce pan
  • 2 bowls for sauces

Directions

  1. Wash chicken, butcher, and pat dry with paper towel
  2. Preheat oven to 375
  3. Melt butter in sauce pan, put half in one bowl, half in the other
  4. To one bowl, add beer. To the other bowl, add Cholula, garlic, vinegar
  5. Place chicken, single layer, on baking sheets with salt, pepper, and oil
  6. Put chicken in oven, cook for 30 minutes
  7. Bring beer sauce to boil, reduce to simmer and reduce to 1/2
  8. Wings are ready when they release easily and starting to brown, may require 5-10 additional minutes
  9. Baste wings with rendered fat/drippings using a spoon. Turn them over, baste again, then pour off excess
  10. Baste half of the wings in the beer sauce
  11. Return to oven, bake for another 20 minutes, again, until brown and not sticking
  12. Raise temp to 450, pour off excess fat and toss wings in sauces
  13. Return to oven and cook, flipping once or twice, for an additional 10 minutes or until crispy
  14. Serve hot or room temp with celery and ranch
