Roasted Pork with a Fresh Orange Sauce


  • 1-2 pounds pork country style rib
  • 1 1/2 cup freshly squeezed orange juice
  • 1/4 tsp cayenne
  • 1 tsp ground cumin
  • 1 shallot, minced
  • 1 tsp grated orange zest
  • 1/4 cup chopped fresh parsley
  • Salt, pepper


  • Skillet
  • Cutting board
  • Sauce pan


  1. Heat oven to 450 degrees, place rack 4 inches from heat source
  2. Sprinkle meat with salt/pepper
  3. Cook pork in pan over high for 2 minutes each side
  4. Put pan in oven to rest, turning once if needed
  5. Combine juice, cumin, cayenne, and shallots to saucepan over medium heat
  6. Cook sauce, stirring until it reduces to about 1/3 cup
  7. Cook the pork until firm but not tough, remove from heat when 145 degrees in center
  8. Put sauce over pork, and add parsley and zest over top.
