Sausage and Pepper Sandwich


  • 2 spicy sausage links
  • 2 tablespoons olive oil
  • 1/2 red pepper
  • 1/2 yellow pepper
  • 1/2 yellow onion
  • Marinara for dipping, about 1/4 jar
  • 1-2 hoagie rolls
  • Butter for rolls
  • Salt, pepper


  • Skillet
  • Cutting board
  • Tongs


  1. Prep by slicing roll, peppers, onion, and splitting and de-casing sausage
  2. Preheat oven to 200 degrees
  3. Heat oil in skillet over medium heat
  4. Brown sausage in pan, rotating for about 4-5 minutes
  5. Add veggies, salt and pepper, and cook until very tender, about 15-20 minutes
  6. 5-10 minutes before finished, place bread in oven
  7. When veggies are cooked and tender (onions clear), remove the bread, spread butter and place sausage and peppers on top using tongs
  8. Add marinara to pan to quickly heat with the remaining oil and serve on the side in a small bowl for dipping
