Bacon Cheeseburger with Truffle Fries

Ingredients, Burgers

  • 1.5 – 2 pounds ground brisket (ask the butcher to grind or grind yourself by pulsing in a food processor)
  • 4 buns
  • 1/2 white onion
  • 6-8 pieces bacon
  • Gruyere cheese to top
  • salt/pepper

Ingredients, Fries

  • 2 pounds russet potatoes (about 4 large), peeled (optional), and cut into 1/4 inch by 1/4 inch fries
  • 2 tablespoons distilled white vinegar
  • Kosher salt
  • 2 quarts peanut oil

Ingredients, Dressing

  • 1 egg yolk
  • 2 teaspoons Dijon mustard
  • 1 cup grape-seed oil (or similar neutral oil like Canola)
  • 1 full jarred roasted red pepper
  • 2 tablespoon ketchup
  • 2 tablespoon sriracha
  • 4 green onions, thinly sliced
  • 1/2 or 1 lemon
  • salt/pepper

  • Cast iron pan or grill

Directions, First Fry

  1. Heat oil to 400 degrees
  2. Clean and cut potatoes
  3. Boil 2 quarts water, 2 tablespoons of salt, 2 tablespoons distilled white vinegar
  4. Add potatoes and boil for 10 minutes
  5. Remove fries to paper-lined cookie sheet and dry for 5 minutes
  6. Pat dry and fry for 50 seconds
  7. Let dry for 30 minutes (can be frozen overnight or up to two months, or used immediately)

Directions, Prep Work

  1. Heat oven to 400 degrees
  2. Make mayonnaise
    • blend in food processor
    • 1 egg yolk
    • 2 teaspoons Dijon mustard
    • 1 cup grape-seed oil, added 1 teaspoon at a time
    • mix
    • 1 tablespoon lemon juice, salt and pepper
  3. Make red pepper dressing
    • blend in food processor
    • 1/2 cup mayo
    • 4 tablespoons minced drained roasted red pepper (about 1 full pepper)
    • 2 tablespoon ketchup
    • 2 tablespoon sriracha
    • mix
    • 4 green onions, thinly sliced
    • 1/2 teaspoon grated lemon peel
    • Salt and pepper
  4. (If using grill for burgers, oil grill top and pre-heat grill to med-high)
  5. Gently make patties with chopped onion, salt and pepper and place in fridge
  6. Mince arugula or parsley and dress with truffle oil
  7. Place bacon on foil, bake, 10 minutes or until done
  8. Move bacon to paper towel to dry
  9. Reduce oven to 200 degrees

Directions, Second Fry

  1. Fry fries 3.5 minutes or until golden brown, place on cooling rack, dress with truffle mixture, salt and put in oven with bacon to keep
  2. Turn off fryer

Directions, Cooking The Burger

  1. Heat skillet 3-5 minutes on med-high heat
  2. Put grape-seed oil on folded paper towel and dab onto pan
  3. Cook burgers 3.5 minutes on side one
  4. Flip burger, add cheese and finish for 3.5 – 4 minutes
  5. Remove to rest, grill buns about 20-30 seconds
  6. Serve burgers topped with bacon, side of fries and red pepper dressing
