
Ingredients, Burgers
- 1.5 – 2 pounds ground brisket (ask the butcher to grind or grind yourself by pulsing in a food processor)
- 4 buns
- 1/2 white onion
- 6-8 pieces bacon
- Gruyere cheese to top
- salt/pepper
Ingredients, Fries
- 2 pounds russet potatoes (about 4 large), peeled (optional), and cut into 1/4 inch by 1/4 inch fries
- 2 tablespoons distilled white vinegar
- Kosher salt
- 2 quarts peanut oil
Ingredients, Dressing
- 1 egg yolk
- 2 teaspoons Dijon mustard
- 1 cup grape-seed oil (or similar neutral oil like Canola)
- 1 full jarred roasted red pepper
- 2 tablespoon ketchup
- 2 tablespoon sriracha
- 4 green onions, thinly sliced
- 1/2 or 1 lemon
- salt/pepper

Directions, First Fry
- Heat oil to 400 degrees
- Clean and cut potatoes
- Boil 2 quarts water, 2 tablespoons of salt, 2 tablespoons distilled white vinegar
- Add potatoes and boil for 10 minutes
- Remove fries to paper-lined cookie sheet and dry for 5 minutes
- Pat dry and fry for 50 seconds
- Let dry for 30 minutes (can be frozen overnight or up to two months, or used immediately)
Directions, Prep Work
- Heat oven to 400 degrees
- Make mayonnaise
- blend in food processor
- 1 egg yolk
- 2 teaspoons Dijon mustard
- 1 cup grape-seed oil, added 1 teaspoon at a time
- mix
- 1 tablespoon lemon juice, salt and pepper
- Make red pepper dressing
- blend in food processor
- 1/2 cup mayo
- 4 tablespoons minced drained roasted red pepper (about 1 full pepper)
- 2 tablespoon ketchup
- 2 tablespoon sriracha
- mix
- 4 green onions, thinly sliced
- 1/2 teaspoon grated lemon peel
- Salt and pepper
- (If using grill for burgers, oil grill top and pre-heat grill to med-high)
- Gently make patties with chopped onion, salt and pepper and place in fridge
- Mince arugula or parsley and dress with truffle oil
- Place bacon on foil, bake, 10 minutes or until done
- Move bacon to paper towel to dry
- Reduce oven to 200 degrees
Directions, Second Fry
- Fry fries 3.5 minutes or until golden brown, place on cooling rack, dress with truffle mixture, salt and put in oven with bacon to keep
- Turn off fryer
Directions, Cooking The Burger
- Heat skillet 3-5 minutes on med-high heat
- Put grape-seed oil on folded paper towel and dab onto pan
- Cook burgers 3.5 minutes on side one
- Flip burger, add cheese and finish for 3.5 – 4 minutes
- Remove to rest, grill buns about 20-30 seconds
- Serve burgers topped with bacon, side of fries and red pepper dressing
